You have two options... You can talk about your sexual history in a clinical way - meaning not a blow-by-blow account, and definitely not written in an erotic manner. May I discuss an event with a guy that mentions his age as long as it he was of legal age in the country I am talking about (using a definitive source for legal age like Wikipedia)? Or, do I need to use a legal age in the US which is between 16-18 depending on the State you live in (if so, which State's legal age do I use...your servers)?

The site is bound by US law - so even though it's legal down to 16 in some areas of the US, don't mention the age unless it's at least 18. For legal under 18 say something like "barely legal" or "recently turned legal" or something like that. But no ages unless they're 18+.
